One thing you dont have to worry about is a stove. Your ponyman will bring one for himself and will be more than happy to earn some extra money by cooking for you - if his kulinary skills are suficient for your taste. Just check his kerozen supplies. A plate, spoon, cup... - you can buy very cheap in Leh and after trek give it to your ponyman as a part of his tips.
My experience with tents&matresses provided by agencies are not encouraging. We got excellent matresses but they were huge. Also tents were comfortable but they were huge&heavy as well. But I guess if you search carefully through all those agencies in Leh you might find a proper solution.
